Steps for Toona toon pot collapsed tofu

Wash the tender buds of the Chinese toon, blanch the Chinese toon in boiling water until the color turns green, and then remove it immediately.

Rinse the Chinese toon with cold water, gently squeeze it dry and chop it up. Slice the tofu for later use.

Add the eggs to the shredded Chinese toon and a little salt and stir well.

Wrap tofu evenly with cornflour, not too much.

Dip the tofu into the egg mixture.

Pour into a 70% hot oil pan and fry until golden yellow on both sides.

Put a little oil in the pan on the heat and heat it up, stir-fry the shredded onions and ginger until fragrant.

After adding the stock to give the aroma, remove the shredded green onions and ginger and pour in the oiled tofu.

Collect the juice over high heat and add a little salt and sugar to season.
