Wash kidney beans and soak in warm water.

Wash the fresh pork belly back and forth with salt, flour and vinegar to remove all the debris in the pork belly.

Add pepper and ginger slices to the water and cook wine, and put cold water into the pot.

Boil until the water rolls and the pork belly turns white. Remove and rinse with water.

The pork belly has a lot of mucus. If washing with water alone is not clean enough, you should use salt, flour and vinegar to wash it back and forth inside and out. The fat inside the pork belly must be removed. Give pepper, rice wine and ginger slices in the water to remove the fishy smell. Salt must be given after the pork belly is simmered. Don't give the red dates early or the soup will not be white. (Mine was given early)
