Steps for Hand-shredded eggplant with minced meat

All materials are ready.

Wash the eggplant, swipe it a few times, and place it in the microwave for 5 minutes (because my microwave oven doesn't distinguish between high, medium and low heat, just adjusts the time).

Chop lean meat into foam, add salt, soy sauce, oil, starch, and mix well.

Heat the pan with oil, put the green pepper into the pan, and fry until tiger skin color.

Remove the eggplant after 5 minutes.

Tear the semi-cooled eggplant and tiger skin green pepper into small strips.

Heat the oil in the pan, add garlic to stir until flavor, add in the minced meat, stir fry until half done.

Add appropriate amount of water and soy sauce and cook the meat until cooked.
