Alkaline water rice dumplings

Since I can remember, I have to eat this alkaline rice dumpling every year during the Dragon Boat Festival. However, after so many years, not only have I not gotten tired of eating this rice dumpling, but my favorite is still alkaline rice dumpling.

Steps for Alkaline water rice dumplings

Wash and soak glutinous rice for more than 1 hour.

Drain the soaked glutinous rice, add edible alkali and mix well. The mixed rice should be light yellow.

Take two washed zongzi leaves and roll them into a funnel shape.

Add the mixed glutinous rice and press tightly.

Press both sides of the rice dumplings inward with your fingers.

Fold down the top zongzi leaves and cover the funnel, and press the zongzi leaves on both sides with your fingers.

Wrap the rice dumplings with the grown rice dumplings and fold them back.

Tie rice dumplings with brown hemp.

Cut off excess rice dumplings.

Soak the prepared rice dumplings in clear water. After they are all cooked, put them into a pressure cooker, add the clear water that has not passed through the rice dumplings, and cook for 25 minutes. Turn off the heat. Let it cool and take it out and eat.
