Steps for mapo tofu

Cut tofu into pieces and use cold water to cool it after being blanched in hot water

Minced beef with onion and ginger

Saute chives and ginger, add minced beef and stir-fry

Add fermented bean sauce, Pi County spicy bean paste, chopped pepper

Add water chicken powder (if you have stock, it is better to avoid putting chicken powder and water). Season with appropriate amount of salt (the taste is lighter or it will be salty when the juice is collected), then add tofu and cook over low heat
