Our dandan noodles here are cucumber with cold noodles and gluten. In fact, in Sichuan, this is not the real Dandan noodle. For some reason, it is called this name in Shenyang. It should be called mixed cold rice noodles ~~ or something, the details are unclear.

It's quite troublesome to make your own cold noodles. You have to mix the noodles and then knead them in water N times. Finally, the washing water is left to precipitate before you can start. The principle is that after the dough is washed, the part that settles in the water is wheat starch. The kneaded dough becomes gluten. Isn't wheat starch just orange powder? Then just add water directly. I searched the Internet for a long time, but I didn't have a specific method, but it was indeed possible to do it. I don't know the ratio of orange powder and water, but I tried to add it, and I felt that the 1:2 effect was good. Anyone who knows the specific proportion, please let me know!
