Maotai-flavored fish head tofu

Steps for Maotai-flavored fish head tofu

Spread bean paste on both sides of the fish head, and cut tofu into thick slices or whatever shape you prefer.

Add a little more oil to the frying pan, add onions, ginger and garlic, stir-fry until fragrant, add the fish head, and fry on both sides until a little scorched.

Then, place the cut tofu on the fish head.

A few large spoons of bean paste (I used almost 80g, and a new box of 300g used about a quarter) add a bowl of water to dilute it, and stir.

Pour the diluted bean paste water on the fish head tofu, add two spoonfuls of soy sauce, bring to a boil, simmer for 10 minutes, and remove from the pan.
