Steps for tofu carp

First remove the hard edges and break the skin of the tofu, and cut it into slender strips of 4 cm *1.5 cm.2
Remove the scales of the carp, wash the internal organs, and make two cuts on each side of the fish.3
Put oil in a wok and heat it up, add tofu strips and fry until golden brown, remove and drain the oil.4
Leave a little oil in the pan, stir-fry the onions, ginger, and garlic until fragrant, then add the spicy bean paste and stir fry. Put the carp into the pan, add tofu, soy sauce, wine, salt, monosodium glutamate, and stock in turn and boil together. After about 5 to 8 minutes, fish out and place on a plate.5
The soup is thickened with 10 grams of starch water (5 grams of starch and water), and drizzle on the fish.
