After the yellow croaker has removed its internal organs, scales and fins, make a flip-shaped knife on both sides of the fish.

Domestic students can choose fresh yellow croaker of medium size to cook it. Yellow croaker produced in Zhejiang tastes best for this dish.

Wipe both sides of the fish with a kitchen paper towel and drain off the water.

After the pan is fully heated, add the oil again and gently turn the pan to evenly distribute the oil on the walls of the pan. Be careful not to put oil in the cold pan.

When the oil is boiled to 50% heat, you can add the yellow croaker. Don't rush to shake it first, otherwise it will easily damage the integrity of the fish skin.

After frying the fish on both sides, pour off the excess oil. Then pour boiling water into the pan, with the water reaching the fish body, and then add the onions and ginger. Pay special attention to using hot water.

The foreign yellow croakers are really too big. For the convenience of stewing later, I split them in two. If they are small yellow croakers, they can be stewed whole, which will look better.
