"Crystal Sugar Xianglian" is a famous dish among sugar beets in Hunan. Since the Western Han Dynasty, white lotus was used to pay tribute to Liu Bang, the Emperor of the Han Dynasty. Therefore, Xianglian is also called Gonglian. Xianglian is mainly produced in the Dongting Lake area. Xiangtan is a famous production area. Huashi and Zhonglupu in the city produce the most and the best quality. There are red lotus and white lotus. Among them, white lotus is round and white, with a fragrant pink and glutinous aroma, ranking first in the country. While excavating the Mawangdui Tomb in Changsha, Hunan Province, it was discovered that Hou had eaten lotus seeds. After tasting the new white lotus with a clear heart but the fragrance of little lotus, Zhang Ji, a poet of the Jin Dynasty, once lamented that "the mouth is tiring and ridiculous, and this body wants to grow old."
The soup is clear, the lotus is white and red, and the lotus seeds are glutinous and have a pleasant fragrance. The white lotus flowers float on the clear soup, like pearls floating in water. It is one of the famous Hunan dishes.
