Soak the clams in salt water for half an hour, spit out the sand, rinse them repeatedly, and remove them to control the water for later use.2
Remove the stalks and seeds of the green and red peppers, wash them, and cut them into slices. Wash the ginger and slice it.3
Pour the oil into the pan, heat it to 50% heat over medium heat, add in the fermented bean sauce and ginger slices and stir fry until fragrant. Pour in the green and red pepper pieces and the clams, change to high heat, cook in cooking wine and stir fry until the clams open.
