Wash and blanch the chicken in water, chop it into pieces; cut carrots and peeled yams into small pieces and set aside.2
Add appropriate amount of water to the pot, add chicken, yam pieces, ginger slices, and cooking wine, cover and cook.3
After the pot comes to a boil, turn to low heat and simmer for 20 to 40 minutes, open the lid and add carrot pieces and salt, cover and continue to simmer over low heat for 10 to 15 minutes.4
After turning off the heat, simmer for another 5 to 10 minutes, add chopped green onion, and serve.
