Taibai Fish Head is stewed tofu with fish head. Legend has it that Li Bai, the great poet of the Tang Dynasty, came to She County to visit the hermit Xu Xuanping. Xu Xuanping was on a boat at the time, so he pointed to the bamboo pole planted on the shore to tie the boat and said,"A bamboo pole in front of the door is Xu Weng's house." However, Li Bai was confused by this and was very depressed when he met her. While I was feeling depressed, I heard the faint sound of the bell coming from the Xigan Mountain Temple, so I went forward looking for the sound. At Wuming Temple, the abbot specially used the spring water next to the temple to quench his thirst. After drinking, Li Bai suddenly felt that his spirit had doubled and he swam through the Xigan Ten Temples in one go. I didn't realize that it was already evening, and I felt hungry. I saw a wine shop by the river, so I walked into it. The restaurant saw that the visitor was extraordinary and imposing, but the dishes in the kitchen had been exhausted, leaving only a fish head and two pieces of tofu, so it simply put the fish heads together into the pot to make a fish head stewed tofu. Li Bai took a sip, and it was extremely delicious and very satisfied. The trouble of not meeting him in his heart dissipated, so he drank it heartily. When he looked out of the window and saw the scene of gurgling water under the moonlight and the silver plate-like moon being shattered by the flowing water, he couldn't help but become a poet, and he immediately spread his notes and sprinkled ink into a poem: "Tiantai Guoqing Temple is known as the Four Wonders in the world. When I come to promote Tang Dynasty, I am no different from China. Flowers and trees cut through clouds, and peaks cover the snow. There is a stream outside the sill, which flows back and breaks the moon." A good chapter that has been passed down for thousands of years remains in this way. Later generations named this dish Taibai Fish Head in memory of the great poet Li Bai.
