Noodles with tofu and chicken diced with fried sauce

Every time I cook noodles, I like to eat it with fried sauce. This time, I changed to another ingredient, Junyue-xiang fried sauce, diced chicken, and tofu to match it. It's really great!

Steps for Noodles with tofu and chicken diced with fried sauce

Prepare the main ingredients for later use (see picture)

Cut the peppers, onions, ginger, and garlic for later use, and prepare the June fresh bean paste.

Wash the tofu and cut it into small pieces.

Shred cucumber and set aside. (Compared with a wire graper, cutting with a knife tastes better.)

Wash the chicken legs, remove the bones and cut into small pieces (as shown in the picture)

Cut into slices and marinate with oyster sauce, half a teaspoon of salt, cooking wine, and white pepper for 10 minutes.

Stir 2 tablespoons of Junyue-fragrant bean paste, 1 tablespoon of sweet flour paste, and 3 tablespoons of water evenly.

Pour the oil into the pan, add the diced tofu, fry slowly over medium to medium heat, and wait until the surface of the diced tofu turns yellow to remove the oil to control it.

Leave the base oil in the pan and stir-fry the ginger and garlic slices until fragrant, then add the marinated diced chicken meat and stir fry.

After the diced chicken meat changes color, add the peppers and continue to stir fry.

Then pour in the sauce, sprinkle with chives, cover the lid, and cook over medium heat for 8 minutes. (Remember to open the lid and stir well halfway)

Put the fried diced tofu into the frying sauce, cover the lid and simmer for 1 minute.

Add a few slices of ginger and 1 tablespoon of cooking wine into another pot, add the removed chicken bones and dried shrimp, cover and cook.

After the water in the pot boils, remove the ginger slices and add the noodles.

After the water in the pot boils again, turn off the heat and pick out the noodles.
