Heat the oil in a thick saucepan, add cinnamon, cardamom, bay leaves, black pepper and cloves, and saute until fragrant. Then add shredded purple onions and saute until the onions are translucent. Add ginger and garlic. Stir fry for about 10 minutes or until onions and ingredients turn brownish red.

When the oil begins to seep out and the mutton dries and turns dark, add 2 cups of water. After boiling, lower the heat. Add salt, cover, cover and cook slowly for at least half an hour.

When the water has been absorbed, add the last 2 cups of water and the diced potatoes, and cook for another hour, or until the mutton is soft and smooth.

It is best to use fresh tomatoes instead of ketchup. Today, I tried making it with ketchup, but it was not easy to fry the oil. If using fresh tomatoes, cut 2 into small pieces, using the same steps.
