Wenzhou fried rice noodles

These dried noodles were sent to me by my mother on the Mid-Autumn Festival. They are a big box. I like to eat dried noodles from my hometown. I don't seem to see them here in Shanghai. This fried noodles is also my mother's best. It's very delicious. The noodles are very chewy. When will I learn my mother's cooking?

Steps for Wenzhou fried rice noodles

This is dried powder from my hometown. (You can also switch to other noodles)

Wash the mushrooms and carrots and cut them into thin slices.

Cut the garlic slices and wash the green vegetables.

Stir the two eggs together.

Dry the powder with boiling water and lightly soften it. (Don't burn it, just pinch it with your hands and feel the noodles slightly hard in the middle)

Pour the oil into the pan and heat it, fry the eggs well, stir into blocks and spread out.

Leave the remaining oil in the pan and stir-fry the shredded carrots, then stir-fry the mushrooms together.

Pour a little oil into the pan again, stir-fry the garlic slices until fragrant, add the small green vegetables and stir fry until soft.

Drain the noodles and stir fry.

Add half a teaspoon of salt, half a teaspoon of white sugar, 1 teaspoon of cooking wine, hold a shovel in your left hand and chopsticks in your right hand, over high heat, and quickly stir fry well.

Finally, add the stir-fried vegetables together, add a little chicken essence and stir well.

This is the fried rice noodles made in Wenzhou, my hometown. Everyone can also add some shredded pork to it when making it. However, there is no rush in the morning, so there is no shredded pork, but it is still delicious.
