Spinach vermicelli

Spinach vermicelli is a very classic cold dish. I used to like to add garlic and mustard, but children didn't like to eat it. This time, I tried to add sea rice. Not only is it nutritious, it adds a lot of aroma and umami to the vegetarian dishes, which is worth recommending.

Steps for Spinach vermicelli

Soak the sea rice in clear water.

After soak the vermicelli in cold water and soften, boil it with boiling water, just for 1 minute. Remove and control the water.

Then put the washed spinach into hot water.

Remove the spinach and immediately add cold boiling water.

Knock the eggs into a bowl and stir.

Put a small amount of oil in the hot pan, pour in the egg liquid, and spread out into egg cakes.

Shred egg cakes.

Squeeze the spinach dry and place it in a large bowl. Add the vermicelli and shredded eggs.

Add salt, vinegar and other seasonings.

Put the oil in the pan, heat it, add the dried sea rice and stir fry for a while.
