Fried Squid with Scallion

I like to eat squid, especially its chewy taste. In the past, due to poor cutting skills and uncertainty about the straight face, squid rolls were often unsuccessful. After many failures, now I have practiced cutting skills and the front and back sides have been clarified. It really matches the saying: "Practice makes perfect" idiom. Now, let's show off my work.

Steps for Fried Squid with Scallion

Remove the film on the surface of the squid, cut it with a cross-cut knife, cut it into small rectangular pieces, add cooking wine and salt, grab it well and marinate.

Take the green onions and cut them into thin filaments; pick and wash the coriander, and cut them into small pieces; one dry red pepper, everything is divided into three; slice ginger and garlic for later use.

Heat the pan with oil and saute the ginger, garlic slices and dry red peppers until fragrant.

Pour in the marinated squid and stir-fry into rolls over high heat.

Add oyster sauce to enhance the flavor.

Pour in the shredded green onion and coriander, and stir-fry well.

Add in the chicken essence and serve out of the pan.
