Steps for Mapo salmon

Peel the salmon and cut it into 2 cm square pieces, place it into a large bowl and add cooking wine, mix the egg white and dry starch evenly with your hands, and marinate for about 10 minutes.2
Wash the green garlic and cut it into 4 cm long pieces, peel the ginger and cut it into pieces, wash the peppers and remove the stalks and cut it into 2 cm long pieces.3
Pour the oil into the pan, wait until the oil is 70% hot and the green smoke can be seen slightly, turn to medium heat, pour in the Pi County hot sauce and Laoganma black bean hot sauce, stir-fry until the aroma and red oil are fragrant, turn to high heat, pour in the green garlic and minced ginger, and then add the salmon pieces, stir-fry until the salmon pieces change color.4
