Steps for Hakka tofu

1
Prepare materials.
2
Material A: Chop the pork and place it in a bowl, add salt, soy sauce, sesame oil, shredded ginger, shredded green onion, and white pepper powder, and stir evenly clockwise with your hands (you can wear gloves) for one minute.
3
Material B: Pour oyster sauce, soy sauce, chicken powder, salt, white granulated sugar, and water into a bowl, and stir until the white granulated sugar melts.
4
Use a knife to gently dig a small hole in one side of the tofu, without digging through the bottom. Gently apply a thin layer of raw flour to the small hole, fill the "material A" into the small hole, gently press it tightly, and use the whole egg liquid smeared on the surface (side of the meat).
5
Turn on low heat (I use low heat all the time), put some oil in the pan, put the freshly filled tofu into the pan, fry until both sides are golden brown, and then pick up and place on a plate for later use.
6
Turn on a low heat, add some oil (there is still some oil left after frying the tofu, so I didn't put it in), add some shredded green onions and saute until fragrant. After saute until fragrant, add the "B material". After the "B material" is rolled, put the tofu that has just been fried. Put it in, simmer for about 5 minutes, turn off the heat, pick up the tofu, pour the sauce on the surface, and sprinkle with shredded green onions. (If you have a small casserole, step 3 directly use the small casserole, and sprinkle with chopped green onion after simmer.)
7
When making Hakka tofu, I left some ingredients that I couldn't use out. There was some pickled pork, unused whole egg liquid, and a little shredded ginger. I used them to make a "bean sprouts, egg flower and minced meat soup".
8
Boil water in the pan, pour the minced meat in and stir (not in a lump), then add the bean sprouts, boil, turn off the heat, sprinkle with egg liquid and turn off the heat.

Remember to sharpen the knife to chop pork quickly. You can also try putting diced mushrooms, diced water chestnut, etc. in the meat.
