This is what my father makes every year during the Chinese New Year, homemade preserved egg sausage! It tastes good!!!

Steps for preserved egg sausage

Salinate the casings, soak them in advance, and rinse them clean.

Beat the eggs into the bowl.

Beat the eggs and add the cooking wine.

Add salt, add soy sauce (not pictured), and stir well.

Add water to the starch and make up.

Add starch water and stir well.

Fasten the front end of casing with thread. Fasten it tightly.

Put the other end of the casing over the bottle mouth of the mineral water bottle.

Chop the preserved eggs, pour into the egg mixture, and stir well.

Hold the top of the mineral water bottle with your hand and pour in the egg liquid.

Tie it with thread every other section and don't fill it too full.

Note: Don't fill the egg liquid too full, it will burst easily. Cook it in cold water, low heat!!!
