Wash and drain the tofu, cut it into small pieces, and make it the size of a matchbox. Stack them neatly in steamers, cover the lid and leave for 5-7 days.

Use chopsticks to pick up the tofu and see that it has light yellow mold. It smells fragrant and feels sticky to the touch. You can pickle it.

Mash red yeast rice into powder, place it on a plate, add salt (a little more), chili powder, pepper powder, pepper powder (depending on your preference), add a little MSG, and stir well with chopsticks.
