Wash the beef and drain it, cut the beef into small pieces, add 1/3 teaspoon starch, 1/3 teaspoon soy sauce, 1/3 teaspoon sugar, and 1 teaspoon cooking wine, mix well, and marinate for a while. Add half a teaspoon of salad oil and mix well before putting it into the frying pan to lock in the moisture of the beef itself.2
Stir fry quickly, so mix the seasonings first: 1 teaspoon of water, 1 teaspoon of chili paste, 1/3 teaspoon of soy sauce, 1/3 teaspoon of sugar.3
