Steps for Beer fish with pickled cabbage

1
Cut the pig red into pieces about 2CM thick. Don't cut it too thin, it will break easily.
2
This is a fish I bought in the market and has been sliced into two large slices. To be honest, I really don't know how to slice it. I just bought good slices.
3
Slice fish, marinate with salt, soy sauce, chicken essence, oyster sauce, sesame oil, cooking wine, pepper, ginger slices, and starch for about 30 minutes, set aside.
4
Marinated fish slices.
5
Wash soybean sprouts, lily shavings, pickled cabbage, green onions, garlic, ginger, bean paste.
6
Pour appropriate amount of peanut oil into the pan, heat it, add green onions, garlic, ginger, and bean paste, stir fry a few times to create a fragrance.
7
Then add sauerkraut and stir fry a few times, cover the lid, and keep it simmer for a minute or two.
8
Pour in the beer.
9
After boiling, add the golden needle shavings first.
10
After the water boils again, add pig red again.
11
Then add soybean sprouts.
12
After the water boils again, put in the marinated fish slices. This is the fish slices that have just been put in and are still blood-red. You have to wait until the color changes before you can be considered ripe.
13
After the fish slices change color and the vegetable water is boiled again, turn off the heat, place in a basin, and finally sprinkle with the chopped turnip and shallots.
