I personally prefer steamed buns with vegetarian fillings. I usually don't put them in the meat when making steamed buns. Cooking oil will be put in the filling instead of the meat.
If the skin of the steamed buns is soft, just add more water when mixing the dough

Steps for Vegetarian stuffed kidney bean buns

1
Pour the noodles into a basin. The small bowl next to it contains yeast. Soak the yeast with 30-40° water. After five minutes, the yeast has fermented. After pouring it into the basin, I add a little baking powder to the noodles (you don't need to add it), then add water while stirring the noodles. The water added to the flour should also be at the same temperature as the yeast water.
2
After the noodles are mixed, cover the basin with a damp cloth. Place the basin in a sunny place, ferment for an hour, wait for the noodles to expand, knead again, and leave for more than 20 minutes
3
Squeeze the kidney beans into sections first
4
Chop the kidney beans and add the prepared chopped green onion and ginger
5
The next step is the seasoning step. Add seasoning according to the amount of rice, salt, chicken essence, and five-spice powder. Add two or three tea spoonfuls of cooking oil. You can add one tea spoonful of soy sauce. Finally, mix the rice and stir well.
6
Remove appropriate amount of dough, knead it well, and knead it into slightly thicker noodles (sprinkle appropriate amount of flour on the panel to prevent the dough from sticking)
7
Cut the dough into regular size pieces
8
When rolling the dough, do not roll the dough too thin, and then place the prepared kidney bean filling on the dough
9
Now it's like a bag.
10
Put the wrapped steamed buns in a steamer and let them ferment again for 15-20 minutes. Finally, steam for half an hour. Do not open the pot immediately after steaming, and lift the pot again after five minutes
