Salad cucumber
By EthaO'Keefe
My son likes to eat cold dishes, such as cold cucumbers, seaweed, cabbage and so on. I asked him what he wanted to eat last night, and he ordered this. It was not difficult, so of course he had to be satisfied. I like to use white vinegar. If I like mature vinegar, I can replace it with mature vinegar. If I like spicy vinegar, I can add chili peppers to make it more enjoyable. If I don't like cilantro, I can leave it alone. But if I add cilantro, the taste will be improved to a higher level. Anyway, everyone can make yourself at home! Just do whatever you want!

Steps for Salad cucumber

1
Wash cucumber and coriander for later use, and cut carrot into small pieces. Chop a clove of garlic. (Forgot to take pictures)
2
Place the cucumber on the chopping board, grab one end of the cucumber with your left hand, and hit the cucumber with your right hand with the kitchen knife horizontally and hard. The cucumber will look like the picture.
3
Cut the cucumber into small pieces.
4
Marinate cucumber and carrot with minced garlic with a small spoon of sugar for a few minutes, pour off the water, marinate with appropriate amount of salt for another 10 minutes, and then pour off excess water.
5
Add appropriate amount of light soy sauce (use one suitable for cold dressing with higher freshness) and white vinegar, mix well, and leave for 5 minutes.
6
Finally, add lettuce and mix well and leave for 5 minutes (skip this step for those who don't like cilantro). Pour a few drops of sesame oil before eating.
