Cut the beef into 2 cm cubes, put it in boiling water and cook for about 8 minutes, remove it for later use; cut the onions and ginger into pieces; peel and cut the potatoes and carrots into pieces, set aside (soak the potatoes in clear water to remove starch and prevent oxidation).2
Heat the wok and put in the oil, add the onions and ginger, add the beef pieces and stir fry for a few minutes after the aroma has been stir-fried; add soy sauce and a pint of fresh soy sauce into the pan and continue to stir well over medium heat; add appropriate amount of water to cover the beef, and boil over high heat and simmer for 40 minutes.3
Add the chopped potato pieces and carrot pieces (the pieces can be cut slightly larger), and simmer for about 20 minutes; simmer until the beef is soft and the potatoes and carrots are cooked, add salt, stir well, and turn off the heat.
