Wash and slice the yam2
Put water in the pan to boil, blanch the yams until they are done, remove them, and dry the water3
Put a little oil in the pan and heat it up. Add chopped green onion and stir-fry until fragrant4
Add the yam slices and stir-fry for a while5
Add salt, sugar, and a little stock (or chicken essence + water)6
Cover the lid and simmer over medium heat for 1 minute7
Remove the pan and load it on the plate.
