By LucasKuhlman
Chai Huo Xianggan is produced in Wugang, Hunan Province. It is a local specialty, and the black bacon is also a unique food to Tujia in Hunan. Tuotuo Mom has always liked this wax-flavored food, the smoky aroma and the tough bite, coupled with strong spicy sauce, as soon as it is served, it is the real "rice suffers"! People can't stop taking a bite!

Steps for stir-fried bacon with firewood and dried meat

1
Slice the fragrant dried bacon, cut the green garlic into sections, slice the ginger, and cut the dried peppers for later use.
2
Pour a small amount of oil into the pan. Because the bacon itself contains oil, part of the oil will be refined when it is greased, so you cannot put too much oil. When the oil temperature reaches 80% hot, add ginger and stir-fry the dried peppers until fragrant.
3
Add bacon to refine.
4
When the fat part of the bacon turns transparent, add in firewood to dry it and stir fry.
5
Pour in half a pot of water, add two tablespoons of chopped pepper sauce, mix well, cover the lid and cook slowly (be careful not to add salt, because bacon and fragrant dried are salty).
6
When the water is almost dry, add green garlic, add a small amount of chicken essence, stir fry a few times, and you can serve in the pot; this dish is salty, fresh and spicy, and is a rare good product for cooking.
