Steps for mapo tofu

Cut the tender tofu into dices, and the dried peppers are also diced; mix well 1/2 tablespoon cornflour and 3 tablespoons water to make cornflour water.2
Bring half a pot of water to a boil, add 1 tablespoon of salt, add the diced tofu in boiling water and blanch for 30 seconds, remove and drain.3
Take an empty bowl, add Pi County bean paste (2 tablespoons), soy sauce king (1 tablespoon), white sugar (1/2 tablespoon), cooking wine (1/2 tablespoon), pepper powder (1/3 tablespoon), salt (1/5 tablespoon), and water (1/2 cup) and mix well to make spicy sauce for later use.4
Heat 3 tablespoons of oil, saute minced ginger and dried peppers over low heat, add minced beef and saute until the meat changes color.5
Pour in the spicy sauce, stir well with the minced beef, and cook until boiling.6
Pour in the tender diced tofu and gently mix well, add cornflour water to thicken, sprinkle with 1/2 tablespoon of pepper powder, and serve on the plate.
