Steps for Huaihua dumplings

1
Cut a small piece of pork into meat paste, add a little sesame oil and soy sauce, and marinate until flavor. Put less light soy sauce, or add a little salt if you don't put it in, to avoid the flavor of soy sauce taking away the aroma of sophora flowers.
2
Mix dough with cold water, knead well, cover it with a damp cloth and stay awake.
3
Select sophora flowers that are not yet fully opened and rinse them clean.
4
Put it into a boiling water pot and blanch it quickly, cut it off and fish it out.
5
Cool quickly and soak in cold water for about 15 minutes.
6
Squeeze dry water for later use.
7
Wash the leeks, drain the water, and chop them.
8
Add a little salad oil and stir well. This is called "oil sealing", which can prevent leeks from contacting salt and separating out a lot of water during the filling process.
9
Soak the vermicelli in warm water until soft and chop.
10
Beat the eggs with a little salt and stir-fry them until done, and chop them up.
11
Mix vegetarian filling: Take half of sophora flowers, half of leeks, all the vermicelli and eggs, and mix into vegetarian filling. The amount of sophora flowers should account for half of all fillings.
12
Add sesame oil, salt, chicken essence, and pepper in turn, mix well in the same direction for each seasoning added before adding the other. The vegetarian fillings are ready.
13
Mix the meat filling: Mix the other half of the leeks and the meat filling in the same direction.
14
Add the other half of the sophora flowers, and the amount of sophora flowers will also account for half of all fillings.
15
Add salt, chicken essence and pepper in turn, mixing well in the same direction for each seasoning added before adding the other. The meat filling is ready.
16
Needless to say, the rest of the steps are made, making dumplings-cooking dumplings-eating dumplings!
17
When paired with vinegar and garlic, the taste is authentic!
