Peel the wax gourd, remove the flesh, and slice it. Bring hot water to the boil, blanch the wax gourd with water, take out for 1 and a half minutes, and set aside

Rib meat (that is, pork belly, fat and lean, peeled when you bought it, of course, you can keep it, personal preference) and cut it into meat pieces about 2- 3 cm wide. Also blanch the water in the pan for later use.

Pour half a pot of cold water into the soup pot, add the blanched meat pieces, add the scallion segments, ginger slices, add cooking wine, 5g of salt, bring to a boil over high heat, and continue to cook over high heat for 5 minutes.
