I saw this pomfret very fresh in the market one day, so I brought one back. Tomatoes are now in the right way, very fresh, and are sour, sweet and appetizing when used for cooking

Peel the tomatoes and cut them into diced pieces, cut the onions into shreds, heat them, add the garlic slices and onions to saute until fragrant, add the diced tomatoes and saute them together. According to your personal taste, add salt, sugar and white vinegar, and use a shovel to fry while crushing the diced tomatoes. Then add a bowl of water, close the lid, turn the heat to medium heat, bring the tomato soup to a boil, until thickened, and then turn off the heat.2
After washing the pomfret, make six or seven cuts on the back, and put some salt on both sides of the fish and in the belly to marinate for 10 minutes. Strain the marinated fish to dry, put some onions and shredded ginger in your belly, and pat dry cornflour on both sides of the fish.3
Pour the oil into the pan, heat it up, fry the fish on both sides until half-cooked, and shovel it up for later use.4

Another method is to pan-fry or deep-fry the pomfret until fully cooked, place it on a plate, then pour the cooked tomato sauce directly over the fish and sprinkle with chopped green onions.
