Steps for twice-cooked pork

1
Wash the pork belly and place it in a cold water pot, boil, skim off the surface dirt, add appropriate amount of pepper, and cook over medium to medium heat
2
Remove the pork belly until it is 80% cooked (chopsticks can be inserted, but not particularly easy), and dry the surface with water
3
Cut the pork belly into large slices, not very thin, otherwise the pork belly will dry and hard when frying
4
Cut the green garlic into sections, separate the white garlic and green garlic, and cut the pepper into slices
5
Add a small amount of oil to the pan (there will be a lot of oil when stir-frying the pork belly) and heat it up, add ginger slices and stir-fry the pork belly together, and stir-fry the pork belly over low heat to remove the oil in the pork belly (stir-frying time should not be too long to prevent the meat slices from hardening);
6
Add 1 tablespoon of Pi County bean paste
7
stir-fry red oil
8
Add white garlic and pepper and stir-fry until cooked, add 1 tsp soy sauce and stir well
9
Add the green garlic and stir fry evenly and serve out
