I made this fried sauce noodles before, and the taste is traditional old Beijing flavor. It doesn't seem to be very innovative. However, I always think that the reason why classics have become classics is because they have been tested by time and are recognized by the public as the best. Good, those complex new tricks may not be delicious, but if we are used to a taste and want to accept a new taste, there is still a process of adaptation.
So I still sent out this traditional flavor of old Beijing bean paste noodles. It didn't have too many ingredients and fancy shapes. It was just simple meat sauce, noodles and cucumbers, but it was a classic flavor that I liked very much.

    Put 100 grams of meat in front of the pig (don't be too thin, it's better to bring a little fat), add a small amount of salt, cooking wine, and egg white and mix well, cut ginger and garlic into the ground, and place 3 tablespoons of sweet noodle sauce and a large tablespoon of Puxian bean bean paste in a bowl. Set aside.

    Pour appropriate amount of oil into the pan and heat it until 80% hot. Add ginger and minced garlic and stir-fry until fragrant, then add in minced meat and chop until done.

    Change the heat to low, add the sauce and stir-fry well, then add 1 spoonful of June fresh soy sauce and half a bowl of water, stir well, and cook over low heat for 5 minutes. When the sauce is slightly thick, add chicken essence and pepper powder to taste, and then add a small amount of water starch to thicken, pour on sesame oil, turn off the heat, and put the sauce into a bowl for later use.
