Steps for Jinsha tofu

Use scissors to carefully cut off the four corners of the bottom of the box, then tear off the film covering the surface, gently invert the tofu and pour it out, and use a knife to cut it into small pieces; put water in the pan to boil, add a little salt, carefully add the tofu pieces and blanch them, then remove the tofu and soak them in cold water.2
Steam the salted egg yolk over water, crush it with a spoon or directly crush the egg yolks with a small spoon.3
Heat the pan and cool the oil, add the salted egg yolks and stir fry, add cooking wine and stir fry, add the shredded ginger, onion, and tofu pieces and stir fry carefully.4
Add salt and chicken essence, add a little stock or water, bring to a boil, pour in water and starch to thicken, and sprinkle with chopped green onion.
