Steps for XO sauce

Ingredients: Jinhua ham, scallops, dried shrimp seasonings: oyster sauce, five-year-old rice wine, salad oil, olive oil, white sugar, sesame oil, white pepper, onion, ginger, garlic head.

Steam the ham and cut into dices, cut the dried shrimp into fine grains, tear and knead the scallops into threads, transfer them into rice wine, and steam for about 20 minutes. Remove from the pan to cool and squeeze out the water.
