Wash the ribs, slice the ginger, tie the green onions, and peel the wax gourd and slice it.2
Put water in the pan and boil, add in the ribs to remove blood and fishy smell, remove the pan and re-add water, add ginger slices, some onion knots and ribs to boil, add a small amount of cooking wine and salt and simmer over low heat for an hour.3
Then add the chopped winter melon and the remaining onion knots and stew for 20 minutes. The winter melon is almost tender. Remove the onion knots and serve.
