hammer broth

hammer broth
Hammer meat. I almost forgot this dish. My mother said she would make it for us, and I remembered it. I only ate it when I was very young, and I basically forgot what it tasted like. I just vaguely remembered that I had to use a hammer to flatten the meat and use it to make soup.

My father hammered all this hammered meat, and I helped him hammer a few pieces. Because my mother went to "work overtime"(playing mahjong), haha. Life at home is very comfortable. I work here every day. I'm really not used to it when I go back. I eat every day.

Steps for hammer broth

  • Make step 0
    1
A piece of lean meat (we don't need more here, we only used a small part), cut it into small pieces, not too big or about 2CM, and add appropriate amount of salted chicken essence to marinate for more than half an hour.
  • Make step 1
    2
After marinating, we are ready to hammer. First prepare a bowl of cornflour.
  • Make step 2
    3
Put the marinated meat into the cornflour and roll it to cover the meat with cornflour.
  • Make step 3
    4
Make the meat covered with raw flour.
  • Make step 4
    5
Use the end of a rolling pin to hammer the meat piece (you can also use a clean hammer).
  • Make step 5
    6
The meat piece will be slowly hammered open, and the raw flour on it will be absorbed by the meat piece and become wet, and the head of the rolling pin will also become wet.
  • Make step 6
    7
Sprinkle raw flour on the meat pieces first, stick some raw flour on the head of the rolling pin, and continue to hammer.
  • Make step 7
    8
Hammer until the meat is thin. You have to control the strength yourself, otherwise it will be easy to break.
  • Make step 8
    9
After hammering, place it in a sieve and size it well, ready to cook in the pan.
  • Make step 9
    10
Boil a pot of boiling water.
  • Make step 10
    11
After the water boils, add the hammered meat slices.
  • Make step 11
    12
Bring to the boil over high heat.
  • Make step 12
    13
The meat slices are thin and easy to cook.
  • Make step 13
    14
Add appropriate amount of salt, chicken essence, pepper powder, chopped green onion to taste.
  • Make step 14
    15
Just crack an egg before taking out the pan。The meat slices are thin and easy to cook.It tastes tender and slippery。
