Northeast Gabaguo
The so-called Gabaguo dish is to put the selected ingredients and seasonings into a pressure cooker, add oil, and press on low heat to make the raw materials produce Gaba and overflow the dry aroma. Because many dishes can be made according to this method, it is called Gabaguo series dishes.
Because Gabaguo dishes produce gaba, there are certain requirements for the selection of raw materials. For example, vegetables and seafood with leaves are not suitable, while raw materials with less water such as meat, potatoes, and sweet potatoes are more suitable.
Because Gabapot dishes need to produce gaba and cannot scorch the raw materials, it is very important to control the heat. Depending on the different raw materials, generally a pressure cooker can be steamed and pressed on low heat for 10-15 minutes.
But you can make a ga bar without using a pressure cooker. So heat is very important.

  • Northeast Gabaguo Make Tips

PS. This dish actually calls for Northeast soybean paste, but I didn't have any. However, using fermented black beans and oyster sauce works just as well. Using two pots to cook this dish is faster and saves you from washing up repeatedly. The ribs must be chopped into small pieces so they are easier to braise thoroughly. If the pieces are large, it's best to braise them for a longer time.
