Steps for Ham and wax gourd clip

1
Peel the wax gourd and pulp it, and wash it with coriander.
2
Cut the wax gourd into thick slices and chop the coriander into thin foam.
3
Cut the thick wax gourd slices open, but leave the bottom open to form a clip.
4
Cut the ham into thin slices slightly smaller than the wax gourd slices.
5
Put the ham slices into the winter melon clips and set them on the plates in turn.
6
Add appropriate amount of salt to a little stock and evenly pour over the ham and wax gourd clips.
7
Put 6 in a boiling steamer, cover and steam for 15 minutes.
8
Steaming the wax gourd, take it out, carefully pour out the soup on the plate and put it into a wok. Use a little cornflour to make sauce, pour it into a wok, add a little chicken essence and stir evenly. When the sauce becomes thick, add the chopped fine coriander foam. Finally, spread evenly on the ham and winter melon clips and serve.
9
This second-rate sauce should be clear to avoid concealing the color of the wax gourd and ham itself.
