Steps for Hot and sour mixed noodles

Ingredients: 100 grams of dried noodles (or fresh noodles), a little mung bean sprouts, half a cucumber, two pieces of coriander. Seasoning: 20 grams of ginger and garlic vinegar, 10 grams of fresh shellfish sauce, 10 grams of chili oil, 5 grams of sugar, 1 gram of salt, 5 grams of sesame oil.

Stir in vinegar, fresh shellfish syrup, salt, and sugar into a sauce and stir to dissolve the sugar.

Blanch green bean sprouts with boiling water and cool them too well. Shred cucumber and cut coriander into sections.

Pour clear water into the pot and bring to a boil over high heat, add the noodles to a boil, cook over medium heat for another 5 minutes, drain the water with cold water (be sure to cool thoroughly).
