Steps for Minced pork and eggplant

Minced onions, ginger and garlic for later use.

Cut the eggplant into strips and soak in salt water for about ten minutes.

Remove the eggplant strips and squeeze dry.

Put oil in a frying pan and saute the ginger and garlic until fragrant.

Add the minced meat and stir fry until it changes color, add chili sauce and stir fry to produce red oil.

Add the tomato strips and stir fry, add soy sauce and oyster sauce to taste, add water and cook until the tomato strips are soft.

Turn off the heat and sprinkle with chives and serve out of the pan.
