Cut the tofu into slices, the size of mahjong and moderate thickness. You can cut the tofu in half to make it moderately thin and thick.2
Chop chopped green onion, minced garlic, shredded ginger, shredded dried peppers and place them in a clean small bowl for later use.3
Cut the leeks and use three to five leeks to enhance the flavor. Put it aside.4
Start frying tofu. You don't need too much oil, just enough to soak up tofu. Heat the oil until it is 70% hot, and then add the drained tofu pieces. Don't stir the tofu pieces immediately to avoid breaking them. When frying, use a wooden frying spoon to gently touch the tofu. If you don't fry it until it is golden and finalized, slowly turn over and continue frying the other side. Turn off the heat until both sides are golden, remove immediately and place in a clean waterless dish5
Add ginger, pepper seasoning, shredded dried peppers to the remaining base oil in the pan, and turn on low heat to slowly simmer until fragrant. Don't fry the peppers. After the strong aroma wafts out, add 2 tablespoons (tablespoons) of Laoganma chili sauce and stir fry well.6
Pour fried dried tofu. Stir well over medium heat, sprinkle with chopped green onion and continue to stir fry twice, add appropriate amount of salt, and make the sugar half the salt. Then add a bowl of water and slightly soak the tofu pieces. Cover.7
When the water is drying, sprinkle in a few chopped leeks and stir fry. Cook on high heat without cover for 2 minutes to collect the juice, then turn off the heat and serve on a plate.
