How to Make Mustard Greens: A Step-by-Step Guide

Mustard greens, or "Jie Mo Dun" in Chinese, are a beloved crispy, pungent appetizer, especially popular in Northern China. Here’s a simple guide to making this refreshing dish at home.

Ingredients: Fresh mustard greens (500g), salt (50g), sugar (2 tbsp), vinegar (1 tbsp), garlic (3 cloves, minced), chili flakes (optional).

Steps:

1. Prepare the Greens: Trim the roots and tough stems of the mustard greens. Wash thoroughly and pat dry. Cut into 4-5 cm sections.

2. Brine the Greens: In a large bowl, sprinkle salt over the greens and massage gently for 5-10 minutes until they soften. Let them sit for 2 hours to draw out excess water, then rinse and squeeze dry.

3. Marinate: In a clean jar or container, layer the greens with minced garlic, sugar, vinegar, and chili flakes. Pour in enough boiled, cooled water to cover them completely.

4. Ferment: Seal the container and refrigerate for 3-5 days. The longer it ferments, the tangier and crunchier the greens become.
