Crispy lotus root fritters, or "oujia," are a beloved Chinese snack with a golden crunch and savory filling. Here’s a simple guide to making them at home.

Ingredients: 300g fresh lotus root (peeled and sliced into 3mm-thick rounds), 200g ground pork, 2 tbsp soy sauce, 1 tsp ginger (minced), 1 green onion (chopped), 1 egg, salt, pepper, 100g all-purpose flour, cornstarch, and oil for frying.

Steps:

1. Prepare the filling: Mix ground pork with soy sauce, ginger, green onion, egg, salt, and pepper. Marinate for 15 minutes.

2. Assemble the fritters: Sandwich a spoonful of filling between two lotus root slices. Press gently to seal.
