How to Cook Loofah and Tofu Stew: A Simple Guide

Loofah and tofu stew is a nutritious and comforting dish, loved for its fresh taste and soft texture. Here’s a basic yet delicious recipe to try.

Ingredients:

- 1 fresh loofah (about 300g), peeled and cut into 1-inch cubes

- 1 block firm tofu (300g), drained and cubed

- 2 cloves garlic, minced

- 1 tbsp cooking oil

- 1 cup vegetable broth (or water)

- Salt, soy sauce, and white pepper to taste

- Optional: A pinch of sugar or chopped green onions for garnish.

Steps:

1. Prep the ingredients: Peel the loofah (if the skin is tough), cut it into bite-sized pieces, and pat the tofu dry to prevent it from breaking.

2. Sauté the aromatics: Heat oil in a pot over medium heat. Add minced garlic and stir-fry until fragrant (about 30 seconds).

3. Cook loofah: Add the loofah cubes and stir-fry for 2–3 minutes until slightly softened. Pour in vegetable broth, bring to a simmer, and cook for 5 minutes.

4. Add tofu: Gently place the tofu cubes into the pot. Reduce heat to low, cover, and simmer for 8–10 minutes, allowing the flavors to meld. Avoid excessive stirring to keep tofu intact.

5. Season: Add salt, soy sauce, and a pinch of white pepper. If desired, a little sugar balances the taste. Stir gently and simmer for 1 more minute.

6. Serve: Garnish with green onions and serve hot with steamed rice.
