How to Make Aspic Salad (石花菜凉拌): A Simple Guide

Aspic salad, or "Shihuacai" in Chinese, is a refreshing, jelly-like dish made from red algae, beloved for its crunch and cooling taste. Perfect for hot days, it’s easy to prepare with a few key steps.

First, soak dried aspic salad in cold water for 6–8 hours until soft and expanded. Rinse thoroughly to remove impurities, then drain and cut into bite-sized pieces. For extra crunch, blanch briefly in boiling water for 10 seconds, then plunge into ice water.

Next, prepare the dressing. A classic mix includes light soy sauce, rice vinegar, a pinch of sugar, minced garlic, and sesame oil. For a spicy kick, add chili oil or sliced chili. Toss the aspic salad gently with the dressing, ensuring each piece is coated.

Let it marinate for 15–20 minutes to absorb flavors. Garnish with shredded cucumber, cilantro, or toasted sesame seeds for color and texture. Serve chilled as a side dish or appetizer.
