Ingredients: 500g fresh shrimp, peeled and deveined; 3 tbsp cooking oil; 2 sliced garlic cloves; 1 tbsp ginger, julienned; 2 chopped green onions; 1 tbsp light soy sauce; 1 tbsp dark soy sauce; 1 tsp sugar; 1 tbsp Shaoxing wine; 1 cup water; Salt to taste.

Steps:

1. Prep the shrimp: Rinse shrimp and pat dry. Marinate with 1 tsp light soy sauce and a pinch of salt for 10 minutes.

2. Sauté aromatics: Heat oil in a wok over medium heat. Stir-fry garlic and ginger until fragrant (30 seconds).
