Ingredients: 2 fresh yellow croakers (cleaned and scored), 3 tbsp cooking oil, 4 sliced garlic cloves, 1 tbsp ginger (julienned), 2 chopped green onions, 1 tbsp light soy sauce, 1 tbsp Shaoxing wine, 1 tsp sugar, ½ tsp white pepper, and a pinch of salt.

Steps:

1. Prep the Fish: Pat the croakers dry and score both sides diagonally to ensure even cooking. Marinate with 1 tsp soy sauce, ½ tsp Shaoxing wine, and a pinch of salt for 10 minutes.
